It may not look nice in the photo, but this dish is absolutely delicious! This dish has been in my must-try list for quite some time. During weekdays when I need to rush to work before 10am, meal must be cooked in 45 mins after sending Jeriel to school. Due to the slow braising process, I had to cancel the plan of cooking this dish several times. I am on leave today so had a little extra time to execute the plan. Do try this out, highly recommended.
Braised Pork Rib & Taro in Claypot
Serves 4
Ingredients:
500g pork ribs, chopped into 3 cm lengths
200g taro, cut into rectangular pieces
5 dried mushrooms, soaked till soft and cut into halves
2 stalks spring onions, cut into 5 cm lengths
3-4 tbsp oil for frying
Water
Marinade:
1 tsp salt
1 tsp sugar
2 tsp cornstarch
1 tsp salt
1 tsp sugar
2 tsp cornstarch
Seasoning:
3 tbsp light soy sauce
1 tsp Shao Xing cooking rice wine Dash of pepper
Method:
- Marinade pork ribs with marinade ingredients.
- Heat oil in claypot. Fry spring onions until fragrant.
- Add ribs and fry for approx. 1 min. Add wine and continue to fry.
- Add taro and mushrooms. Fry till ribs are half cooked.
- Add water enough to cover the content. Seasoning with seasoning, cover and cook on low heat for approx. 30 minutes or until ribs are tender and taro has turned mashy.
- Serve hot with chopped spring onions and coriander sprinkled on top.

At first I thought you added tau chew (yellow bean paste) into the seasoning but no...just soy sauce and chinese wine. Interesting! Might just give it a try but I hardly ever buy pork ribs, I'm scare of chopping it!
I love this dish too. So far only have it in restaurants. Will try this now that I have the recipe, but can only do it on weekend since like you weekday I only have 30-45mins to prepare dinner.

I think it could be because of the color, due to the photo editing actually, hehe....We are fortunate that the butcher helps us to chop, so I have pork ribs once in a month.
